Method · 9 steps
- 1
Season the lamb cubes with salt and pepper.
- 2
Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb in batches, about 5-7 minutes per batch. Remove lamb and set aside.
- 3
Add the chopped onions to the pot and cook until softened, about 5-7 minutes.
- 4
Stir in the cumin, coriander, ginger, and turmeric. Cook for 1 minute until fragrant.
- 5
Return the lamb to the pot. Add the chopped tomatoes, vegetable broth, and cinnamon stick. Bring to a simmer.
- 6
Cover the pot and reduce heat to low. Simmer for 1 hour and 30 minutes, or until the lamb is very tender.
- 7
Stir in the dried apricots. Continue to simmer, uncovered, for another 15-20 minutes, or until the sauce has thickened slightly and the apricots are plump.
- 8
Remove the cinnamon stick. Taste and adjust seasoning with salt and pepper if needed.
- 9
Serve hot, garnished with fresh coriander, alongside couscous.
