Method · 8 steps
- 1
Coat 2-3 diced chicken breasts in 1 tsp each of ground cumin, ground coriander and turmeric. Put the chicken in the fridge to marinate while you prepare the sauce.
- 2
Start the sauce by frying ½ a large onion (roughly chopped), 2 garlic cloves (chopped) and 1 green chilli (finely chopped) in a little vegetable oil in a large pan, until browned, about 5 mins. Pour in 300 ml water and let it simmer for around 20 mins.
- 3
Meanwhile, use a food processor to purée the canned plum tomatoes (400 g can) until smooth.
- 4
Warm a splash of oil in another large pan and add 1 tsp turmeric, 1 tbsp ground cumin and 1 tbsp ground coriander, cooking for about 1 min. Stir in the puréed tomatoes and simmer for roughly 10 mins.
- 5
Blend the onion mixture smooth in the food processor and stir it into the spiced tomatoes. Season generously, then simmer for 20 mins. This sauce freezes well, so you can make a big batch.
- 6
Fry the marinated chicken in a little vegetable oil, stirring continuously. After a few mins, lower the heat and add the other ½ onion (sliced), the chopped red pepper and the red chillies (finely chopped). Keep stirring until the onion and pepper are soft.
- 7
Pour the sauce over the chicken, then simmer for 10-20 mins, thinning it with a little water if it becomes too thick.
- 8
At the last moment, mix in the garam masala (2 tsp) and a handful of chopped coriander. Accompany with basmati rice or naan.
