Method · 4 steps
- 1
Set aside 2 tbsp of the red onion for the salsa. Warm the oil in a saucepan, then cook the rest of the onion with half of the red pepper for 4 mins, until soft and lightly coloured.
- 2
Add the rice to the pan and stir, then pour in the stock and drop in the kidney beans. Add a pinch of salt and bring everything to the boil, stirring just once, then cover with a lid and turn the heat right down so it simmers gently. Leave to cook for 15 mins, at which point the rice should have softened and soaked up all the stock.
- 3
Rub the Cajun seasoning over the turkey steaks and cook them in a griddle pan or a non-stick frying pan for 4-6 mins per side, until cooked through.
- 4
Dice the pineapple and mix it with the reserved onion, the rest of the red pepper, the green chilli and the lime juice. Top the steaks with the salsa and serve alongside the rice.
